Drink of the Week: Pina Colada Smoothies

Around this time of year, I start dreaming of exotic vacations.  Laying out on the beach, eating anything I want to, drinking frozen concoctions, trying to decide whether or not to get a massage by a cabana boy named Ricardo. Unfortunately this is not my reality. So I drink things like this. Only with more rum.

Did I mention this would be a great drink for a destination wedding?

Pina Colada Smoothies


  • 1 cup fresh pineapple chunks
  • 1 cup unsweetened coconut milk
  • 2 shots of Malibu Rum
  • 1 banana
  • 1/4 cup ice cubes
  • 2 teaspoons honey, optional
  • pineapple wedges, for garnish


In a blender, combine the pineapple chunks, coconut milk, rum, banana, ice and, if desired, honey. Puree until smooth. Pour into 2 large glasses. Garnish each serving with a pineapple wedge.

Makes 2 servings.

Sorry we have been slacking lately guys! We are adjusting to the death of a hard drive and internet connection has been sparse. Hoping to be back up at the beginning of next week! All this time off means there are a lot of great ideas brewing in my head just waiting to get posted!!!

Drink of the Week: Watermelon & Raspberry Lemonade

Watermelon and Raspberry Lemonade


  • 6 cups watermelon cubes (seeds removed)
  • 1/4 cup raspberries
  • 1 cup water
  • 1/3 cup sugar
  • 1/2 cup lemon juice
  • 8 oz. watermelon flavored vodka


Place watermelon, raspberries and water in container of electric blender, cover and blend until smooth. Strain through fine mesh strainer into pitcher. Stir in sugar and lemon juice until sugar dissolves. Refrigerate until chilled, about 1 hour.

Makes 4 servings

Drink of The Week: Frozen Peach Margarita

Fall is quickly approaching. When I start seeing the beautiful ripe peaches at the grocery store, that’s when I know. That there is an end to the heat, halloween is on it’s way and carmel apples, apple cider and pumpkins are in my future. With that in mind I thought we would go with something just peachy this week!

Frozen Peach Margarita’s


• 3 peaches peeled and sliced
• 2 T fresh lime juice
• 1 C tequila
• 1/2 C triple sec (orange cointreau)
• 3 T honey
• 3 C ice


  1. Peel and cut your peaches into manageable pieces. If you want, you can stick the peaches in the freezer before you make your drink, but it’s not totally necessary.
  2.  Put all the ingredients in a blender and blend on high speed until your desired consistency is reached.
  3.  Pour into frozen glasses. You can salt the rim if you want, but I just garnished with a piece of fresh mint.

Makes 3 to 4 drinks.
