Drink of the Week: Pina Colada Smoothies
Around this time of year, I start dreaming of exotic vacations. Laying out on the beach, eating anything I want to, drinking frozen concoctions, trying to decide whether or not to get a massage by a cabana boy named Ricardo. Unfortunately this is not my reality. So I drink things like this. Only with more rum.
Did I mention this would be a great drink for a destination wedding?

Pina Colada Smoothies
- 1 cup fresh pineapple chunks
- 1 cup unsweetened coconut milk
- 2 shots of Malibu Rum
- 1 banana
- 1/4 cup ice cubes
- 2 teaspoons honey, optional
- pineapple wedges, for garnish
In a blender, combine the pineapple chunks, coconut milk, rum, banana, ice and, if desired, honey. Puree until smooth. Pour into 2 large glasses. Garnish each serving with a pineapple wedge.
Makes 2 servings.
